Steamed Mussels in Chilli Tomato Sauce.
Serves 2-4
Ingredients:
2kg fresh mussels, cleaned and debearded
1 tablespoon olive oil
2 cloves garlic, minced
1 brown onion, diced
2 small red chillies, deseeded and chopped (option to choose as much or little as you like depending how much heat you like)
Can of crushed tomatoes or passata
1/2 cup dry white wine
1/4 cup chopped fresh basil
Salt and pepper to taste
Crusty bread (optional for serving)
Instructions:
To cook sauce: In a pot heat the olive oil over medium heat and add the garlic, onion and chilli and cook stirring for around 2 -3 minutes until fragrant or the onion softens. Add the white wine and cook for around a minute until evaporated. Add the can of crushed tomatoes and stir. Increase heat to high to bring to a boil and then reduce heat to let the sauce simmer for around 10-15 minutes. Season with salt and pepper.
In a separate pan or wok with a lid: Heat up the pan and add a quarter cup of water. Add the mussels (don’t overcrowd the pan, if too many do in two batches). Cover the mussels with a lid and leave to steam undisturbed for around 4 minutes until the mussels start opening. Once the mussels have opened take off the heat and add to your serving bowl.
Pour the sauce over the cooked mussels and garnish with chopped fresh basil. Serve with fresh toasted crusty bread and enjoy!
