Foolproof Tomato Sauce.

To top 2kg of steamed mussels.

Ingredients:

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 1 onion or shallot, chopped

  • 1 tablespoon mixed Italian herbs

  • Tomato passata or can of chopped tomatoes

  • 1 cup chicken stock (or vegetable stock)

  • Salt and pepper to taste

  • Fresh parsley to top

Instructions:

  1. This is our foolproof tomato sauce for mussels. Begin by sautéing your onion and garlic in olive oil for 2 minutes or until the onion softens. Add in your tomato passata or can. Give that a stir and then add in stock, herbs and season with salt and pepper.

  2. Bring sauce to a boil and then turn stove down low to gently simmer in the background. Once mussels are cooked add the sauce to the mussels and top with fresh parsley.

    NOTE: We prepare our sauces separately from steaming our mussels because the mussels often retain sea saltwater, which they release as they open during cooking. This can result in the sauce being too salty for our liking if everything is cooked together.
