Garlic White Wine Mussels.
Serves 2-4
Ingredients:
2kg fresh mussels, cleaned and debearded
1 tablespoon olive oil
50g butter
2 cloves garlic, finely diced
1/2 brown onion or 1 shallot, finely diced
1 celery stem, diced
1 cup white wine
1/4 cup chopped fresh parsley
Crusty bread (optional for serving)
Instructions:
In a pan with a lid: Heat oil in pan and add butter to melt. Add onion, garlic and celery and cook until softened and fragrant, around 2 - 3 minutes.
Add wine and simmer for a few minutes.
Add in mussels in an even layer and put lid on top. Steam mussels for around 5 minutes until they’re all opened. Halfway through give mussels a quick stir. As they open they’ll release a bit of sea water, this will add to the sauce/broth.
Once mussels have all opened take off the heat. Stir mussels and garnish with the fresh parsley and serve right out of the pan with crusty bread to dip into the delicious broth!
