Grilled Garlic Butter Mussels

Serves 2-4 (side dish)

Ingredients:

  • Half kilo fresh mussels, cleaned and debearded

  • 4 tablespoons butter, melted

  • 3 cloves garlic, minced

  • 1 tablespoon lemon juice

  • 2 tablespoons fresh parsley, chopped

  • 1/4 cup Parmesan cheese, grated

Instructions:

  1. Preheat your grill to medium-high heat.

  2. In a pot or pan with a lid, add about 1/4 cup of water and heat up. Add the mussels and steam for about 3-4 minutes or until the mussels have opened.

  3. Once steamed, carefully remove the mussels from their shells, leaving one half of the shell intact with the mussel meat. Arrange the mussels on a baking sheet or grill-safe dish.

  4. In a small bowl, combine melted butter, minced garlic, lemon juice and chopped parsley. Mix well.

  5. Spoon a generous amount of the garlic butter mixture over each mussel. Place the half-shelled mussels under the grill.

  6. Grill the mussels for about 5 minutes, or until the garlic butter is bubbling. Sprinkle grated Parmesan cheese over the mussels during the last minute of grilling.

  7. Take tray out from under the grill and serve immediately!
