Mediterranean Mussels with White Wine and Herbs

Serves 2-4

Ingredients:

  • 1kg mussels, cleaned and debearded

  • 3 tablespoons olive oil

  • 1 onion, diced

  • 4 cloves garlic, minced

  • 1 cup dry white wine

  • 1 can diced tomatoes

  • 1/2 cup Kalamata olives, pitted

  • 1/4 cup capers

  • 1 teaspoon dried oregano

  • 1/2 teaspoon dried thyme

  • 1/4 teaspoon red pepper flakes (optional)

  • 1/4 cup fresh parsley, chopped

  • Crusty bread (for serving)

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add in the diced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute, until fragrant.

  2. Pour in the white wine and bring to a simmer. Cook for about 2 minutes to let the alcohol cook off.

  3. Stir in the diced tomatoes, Kalamata olives, capers, dried oregano, dried thyme and red pepper flakes if using. Bring to boil and then turn down low to a gentle simmer.

  4. Whilst the sauce cooks, in a separate pot with a lid steam the mussels for about 5 minutes or until the mussels have opened.

  5. To the sauce taste and adjust seasoning with salt and black pepper if needed.

  6. In a serving bowl add the steamed mussels, pour the sauce over and top with freshly chopped parsley. Serve with crusty bread for dipping!
